Governor Jared Polis signed a new law Tuesday that will allow food trucks to operate more easily across Colorado.
The law sets up a reciprocal licensing system, meaning trucks that pass fire safety inspections in one city can use that permit in others. It also lets food trucks operate in Denver with a state-issued food safety license, skipping a separate city inspection.
Cities can no longer ban food trucks in areas where restaurants are allowed, expanding access for mobile vendors.
